The story of Laite is pure love poetry: in 1987 Fabrizia Meroi left Cividale for Sappada without ever going back there; she met Roberto Brovedani and three years later they opened their business, “two hearts and a restaurant” as they like to call it. Laite, meaning sunny slope in local dialect, is surrounded by the Alps on the Veneto-Friuli border and gives its guests a warm welcome among walls and floors made of wood and with a cuisine originating from the ancient inn run by Fabrizia’s grandma. Nowadays, creativity, sense of beauty and variety of colours stand out in this mountain home. Many traditional recipes enjoy a fresh touch here: venison fondente, spruce tips, mushrooms, pine nuts and non-alcoholic gin and tonic with Trout and fennel, aniseed, pollen waffle, spirulina algae and liquorice mayonnaise; Venus rice noodles, cappucci, speck and cumin with Sopa coada. Roberto moves with elegant professionalism among the tables in the dining hall and in the windowless stone wine cellar, where all valuable items are kept in the homes of Sappada.
