Everything starts from the spirit before reaching taste and the well-being of the body. This is the mantra on which Pietro Leemann laid the foundations of Joia, celebrating its 30th anniversary this year. To do so, he got his inspiration from the schools of thought of Chinese dietetics and Ayurveda, as well as from the Steiner school, a field and life choice. A great vegetarian cuisine with a protein element in the middle because “Preparing food is a gesture of love but also a form of freedom: when we choose what to put on our plate we are enjoying freedom from imposition” explains the chef, who started this adventure when he was only twenty-nine. From plants he has extracted colours, refinement and lightness, successfully bringing all-round taste and great visual appeal also to dishes in the green universe. The sacredness of food is well represented here, together with the balance of tastes and the well-being of the spirit: Leemann is the starting point for a journey to rediscover food as a source of life and sustenance, in a holistic view of life.
