Born in South Tyrol but with a sincerely Mediterranean heart, the chef reveals his inexhaustible passion for unspoilt landscapes, greenery and wild herbs, but also his Mediterranean streak inspired by Southern Italy.
Feathered game and wild fish blend admirably with other noble raw materials and his well-loved olive oil in creations that always target full taste. A warm, welcoming and cosy place where guests can savour the flavours of the sea while filling their lungs with healthy mountain air: a culinary journey covering thousands of miles from one bite to the next.
