Roberto Proto is not afraid of perfection, indeed he makes it his constant subject of research at his Il Saraceno in Cavernago, land of mediaeval castles. Here, surrounded by the Bergamo countryside, home of distinct, earthy flavours, the chef revolutionises tradition and dares to launch into seafood dishes, a fish triumph, and white and sparkling wines as their worthy accompaniment. But nothing is left to chance: Roberto’s parents actually come from the Amalfi Coast, and in 1976 they arrived in Bergamo to open the doors of their trattoria, an unpretentious and homespun place at the time. Nowadays the same walls are their son’s realm where he has raised the refinement of Mum and Dad’s cooking through creative combinations and an invincible passion that leaves a satisfied taste in the mouth. One example is the Bergamo-Amalfi Casoncello di mare, a classic pasta dish filled with creamed salt-cod and served with stewed, peppered mussels and octopus, a dish that builds a bridge between Roberto’s origins and the land that welcomed him. The impeccable savoir-faire of his wife Maria Morbi fills the air in the dining room, where she plays hostess providing a warm, graceful and refined welcome. The elegant and minimalist style, with soft lines and suffused lighting, creates an intimate and sophisticated atmosphere for die-hard sentimentalists.
