The director of this magic is called Alberto Faccani, deep eyes and an uncommon talent, forged over the years with grand masters such as Gualtiero Marchesi and Ferran Adrià to name a few. Determined to become a cook from the age of five, he has learnt to recognise perfectly the different tastes of his Romagna guests prone to imagination without sacrificing substance. The result is a wealth of intense recipes, inspired by strong links with France and leaning towards the roundness of flavours rather than contrasts. Provocative moves are barred and the chef shines with his extremely-gifted hand which fishes from the Adriatic Sea and uses colours from green herbs to put the finishing touch to masterpieces that make you smile with amazement. Hats off to his organisational and entrepreneurial spirit in working for the territory.
