The new format of the Perbellini chef is enjoying well-deserved success and his menu, a hymn to the modernity and essentiality of his ingredients, is so popular that it is no easy matter booking a table. With the invaluable help of sous chef Giacomo Sacchetto, the kitchen becomes the stage and the “art with classical foundations” creates the chef’s dishes, with a touch of intimacy, which means it is Casa Perbellini. Dishes that have made history in this cuisine include Sesame wafer, branzino tartare, caprino with chives and liquorice sensation; Risotto in bianco, oysters and scallops. Barbara Manoni masterfully welcomes guests in the dining room, while Marco Matta offers rare vintages and sizes, “those of the chef”, Giancarlo Perbellini’s personal reserve. Superlative pastries, which with the “Casa Perbellini’s” Sweetness, entertain palates with desserts that are nothing short of amazing.
