Alpine-Mediterranean philosophy is the cornerstone of Gerhard Wieser’s style at the helm of the Trenkerstube restaurant since 2001 inside the elegant Hotel Castel. The chef refines his art on a day by day basis in a spiral of growing perfection that seeks the taste and visual recognition of its ingredients with respect to the aesthetic composition. When the fertile lands of Alto Adige are not enough to satisfy the chef’s desire for research, his cuisine acquires touches of the exotic and presents pleasurable, yet healthy blends. Among his most esoteric dishes we can mention quinoa ravioli, trout with Macadamia nuts, turbot with salad, saffron and a bed of bouillabaisse and also Wagyu di Kobe. A stopover here fills the soul with values: the natural raw ingredients, the sophisticated cooking techniques, the wholesomeness and beauty of the recipes and an impeccable mise en place. The wine cellar is a treasure house with over 500 carefully-selected wines to please any wine connoisseur.
