Only eleven tables in this great little restaurant dedicated to the patron saint of hunters. For their wonderful Hotel Rosa Alpina, the Pizzinini family wanted a master of cuisine, Norbert Niederkofler, a man with experienced hands and appropriate good taste. “Variety is all about mixing simple things. My commitment in culinary affairs is developed through my respect for the product, and my skill in making the most of it by using the right cooking method. The result must be “evident” in its flavour and in its appearance that is delicate, simple but amazing. You can see and taste the lightness,” explains the chef. His philosophy of “Cook the mountain”, returning to essentials, has made him a Northern Star in the context of contemporary dining. Nowadays a cook is ethical, environmentally friendly and socially responsible and nourishes his guests inspired by the perfection of nature and trains the future generations: with this commitment in his heart, Niederkofler has also become the sponsor of Care’s, an international event which has returned prestige to mountain cuisine.
