El Molin is the result of the expertise of a family that has for generations been in charge of the best catering in Val di Fiemme, with techniques learned from Adrià and Ducasse. The menu consists of unusual raw ingredients such as moss and lichens, herbs collected in the woods and smoked items, in a trial process that has lasted for more than twenty years and which still has much to offer to Italian haute cuisine. Here innovation gushes forth like the streams that flow into the valley, involving the latest but also the most primordial of cooking techniques, and primarily the place that turns ancient recipes into stunning new creations, from the ashes of tradition into creative experiments. This ancient mill, a cradle of creativity, reveals three menus that wend their winding way through historicity, emotions and essences, managing to capture the aromas of the mountain in dishes like raw grayling, watercress, spruce and sorrel and in “hunting traditions” with dried venison heart and black garlic ice cream, not to mention mushrooms, clover and yarrow.
