Delicacies in the Engadine in Champfèr, St. Moritz, where there stands a charming rural House from the 1600s: the cuisine of Martin Dalsass could not find a more impressive setting. A single creed – a return to nature – is the inspiration for this creative Aesthete, whose recipes generously yet nimbly exalt the flavours of the Mediterranean cuisine. His pursuit for excellence starts with the raw ingredients such as extra virgin olive oils, chosen from around a dozen to create his delicious chocolate mousse, a virtuosity truly worthy of an “Olive Oil King”. Moreover, Martin can easily be found in his vegetable garden, collecting wild vegetables, sweet-smelling herbs and edible flowers, or in the woods looking for mushrooms or fishing in his boat. That is why his creations emanate the force of pure ingredients and maintain that spontaneity that stimulates the senses. But the charismatic host also leaves room in the dining hall for his son Andrea who is a skilful communicator with sensitive advice for helping guests choose the right wine.
