The chef’s style is sincere and echoes the lessons learned in four high-class restaurants – from Schaffhausen to Los Angeles, Rome and Aschau im Chiemgau – and now sees sharing as the highest moment of tasting. The Segreto’s menu emphasizes local ingredients, such as Rheintal asparagus, whitefish or pike-perch from Lake Constance, as well as a fine selection of raw milk Swiss cheeses, but also resounds with notes of the Mediterranean in its risottos and pasta all’uovo. When not in the kitchen, you will find Benninger in the vegetable garden or in the woods stocking up on ideas, produce, colours and aromas he will offer you with his stock formula: “Focus on the flavours and fragrances and leave us the pleasure of providing the welcome”.
