Ciccio Sultano

Ciccio Sultano’s restaurant is located in a bourgeois setting, an apartment that has been turned into a dining hall with a number of small rooms and delightful niches, inside the Palazzo La Rocca. This was the palazzo used as the film set for “Divorce Italian Style” with Marcello Mastroianni. Whenever you read a menu, you immediately get an idea of the chef’s character. What strikes you with Ciccio Sultano’s menus is his interest for raw materials (Blue sea Omega 3) and sentimental elements (…three sauces, three valleys, three dialects) seasoned perhaps with an air of adventure (Would you like me to be the chef? and Second fiddle to whom…?!). As he likes to point out: “When approaching a project for a new dish, I make my mind up based on three principles: sense of identity, belonging and responsibility. What I mean is that it must firstly be mine, then Sicilian and finally in line with the expectations of my guests.” Without forgetting that: “Sicilian cuisine is a cuisine born from dominations and cultures that have influenced its physiognomy with various layers. You need to be aware of and recognize the various influences and know how to handle them.”
