They call him the most avant-garde chef in Puglia. Angelo Sabatelli toured the world via Monopoli, Rome, Jakarta, Hong-Kong, Shanghai and Mauritius before finally choosing the splendid Palazzo Romanazzi in Putignano. Cosmopolitan atmosphere and modern design in a historic noble villa with a wine cellar of 125 square metres in bare stone, which houses 800 labels, including a selection of over one hundred champagnes. A cuisine that is inspired by and interacts constantly with the past to which it is tied, but that modernizes it and surpasses it, with results nothing short of amazing. A table rich with knowledge, flavours and colours: a feast for the senses to be enjoyed by the chef’s guests. The typical dishes include Orecchiette pasta with meat sauce +30 and melted canestrato DOP; Cream of broad beans, sautéed chicory, marinated oyster; Black and white roasted aubergine and pigeon, and then a number of highly creative dishes from other regions. Moreover, the motto that the chef has always followed is: “Take risks and conquer your fear”.
