Chef Enrico Bartolini departed from the kitchens of the Devero and arrived in Milan at the prestigious Museum of Cultures, an international and urbane environment and a perfect location for his Contemporary Classic culinary philosophy to find appreciation. A cuisine that looks again at tradition and interprets it without allowing the dishes to become works of art that are incomprehensible to most people but building a real bridge between ancient art and modern abstract artists in line with the environment surrounding the restaurant. A clean, rigorous design with works of art on the walls and unobtrusive white woodwork help to focus one’s attention on the colour-blended creations of the chef: the deep red of Risotto with beetroot and gorgonzola sauce, the pink of Fried Prawns from Santa Margherita, the iridescent Harlequin Risotto and without forgetting the Italian-style dessert recalling the Italian Tricolour. The Master of Ceremonies in the dining hall is Sebastien Ferrara, and whenever Enrico is far away fulfilling his numerous commitments in Italy and abroad as a leading, successful chef, the kitchen is in the safe hands of Remo Capitaneo.
