We are in the temple of hospitality and fine cuisine, which has been in the top rankings longer than any other restaurant in Italy. It was founded as a rustic trattoria on the banks of the River Oglio and is now a benchmark with its dining room run by Antonio and Alberto Santini, and its kitchen in the safe hands of Nadia and her son Giovanni. But the Santini family certainly does not like to stand still: no expenses barred for maintaining refinement but in step with the times and by completing the generational changeover with no slips or fumbles with the baton. Its recipes belong to tradition but are continually adapted according to modern styles: prime examples are provided by Pumpkin Tortelli or Agnoli (small ravioli) in Chicken broth. The wine cellar, which is one of the most coveted in Italy, is managed perfectly by Alberto, the best sommelier of the Académie Internationale de la Gastronomie, and preserves a range of fine, rare wines with a certain predilection for French labels. In the summer, it is a pure treat to dine under the portico overlooking the garden.
