In the old stately home of the Marquises of Pallavicino, you only need to go past the staircase leading down to the cellars full of hanging culatellos and wheels of Parmesan cheese, to be overwhelmed by the unmistakable, intoxicating aromas that Emilian cuisine can offer. At the Antica Corte Pallavicina you can try culatello with three different curing periods (18, 27 and 37 months), followed by Soffici with three Parmesan cheeses in Fidentina chicken broth under a puff pastry crust, and then enjoy a taste of frog legs in sweet garlic, parsley and polenta, or lightly smoked Fillet of Nero on poplar leaves and hay in beer. A farm, a charming, historical relais and a restaurant, all managed by the Spigaroli brothers with absolute masterly skill, from rearing pigs that produce excellent cold meats to tending vineyards that produce wines like Strologo, Tamburen, Fortana and the Rosso del Motto and also growing vegetables and fruit. The welcome from the open fire and the locals warms your heart as you watch the Po slide gently by. Parma is the province of enjoyment and this is its temple.
