The cuisine is stripped of all unnecessary frills and points straight at the essentiality of the raw material, bringing it to the table with a simplicity that is as apparent as it is disarming, thus exalting its taste. This is the basic concept of Niko Romito, a self-taught chef who is not afraid of challenges. He was courageous in his choice of transforming a former 16th-century monastery in the Abruzzo National Park into a sanctuary for gourmet tourists. Eighteen years ago, along with his sister Cristiana, he decided to make a fundamental change to the family-run restaurant and turn it into a research centre on cuisine. Since then, the Reale has been a hive of activity for culinary techniques, alchemy, genius and relentless experiments, achieving sculptured dishes that explode with flavour. The dining room which is equally masterful and run by Cristiana with the support of the highly professional sommelier Gianni Sinesi, converses with the kitchen using the same dulcet tones. But the dynamism of this talented team also branches out into other star-studded projects entailing widespread catering, vocational training and products for domestic consumption, centred on Milan and Rome.
