An ancient renovated farmhouse between Bolzano and Merano, where stone, wood and a solid, traditional cuisine, tinged with creative and artistic flashes, are distinctive features of the gourmet journey to South Tyrol: we are in the kitchen of Anna Matscher, at Zum Löwen, where you can feel a deep love for the garden she manages personally and for the choicest raw materials that the chef goes in search of among the small local producers. A strategy learned by themselves that has become a science, using techniques that are now a distinct feature of their style of cuisine, like that of smoking meat. In over thirty years of activity Anna Matscher has succeeded in mastering dishes with noble meats such as Leg of venison, celery purée, Cornelian cherries, cocoa beans and puffed millet, or with offal, also with Bruschetta of brown bread with calf’s head, turnips, scallions and chives or Kidney of veal cooked in its own fat, barley grass and marinated chanterelles. A dignified wine cellar, consisting of many small producers from Italy, Germany and France, is the domain of her husband Alois and her daughter Elisabeth, both sommeliers, as they deal with guests.
