St. Hubertus is the patron saint of hunters, but has also been a home for gourmet enthusiasts ever since a grand master of the culinary arts, Norbert Niederkofler, started preparing his creations within the Hotel Rosa Alpina, a bastion of haute cuisine in the Alps, belonging to the Pizzinini family. “Cook the mountain” is a slogan that highlights the philosophy behind every dish he prepares: use all the resources provided by the surrounding environment, in a socially responsible manner, conscious of the fact that, even in the most inaccessible places, nature provides everything you need for top-quality cuisine. His mentors include Eckart Witzigmann in Munich and David Bouley in New York. In his long career Niederkofler has gradually matured a conviction that “The star in the kitchen is not the chef, but the ingredients”. An event known as Care’s was created with the aim of passing this view on to future generations and has received ample international acclaim, placing mountain cuisine firmly under the spotlight. For gourmands: the desserts and pastries of the pastry chef Andrea Tortora deserve a special mention.
