The adventure of one of South Tyrol’s most inspired chefs began by chance, when the young Karl Baumgartner was still a waiter in the family restaurant. Today, as a self-taught master, Karl moves fluently between traditional local recipes and new reinterpretations with a profound Mediterranean flavour. A common element in his dishes is the search for local ingredients, purchased from local farmers, with whom he works in perfect harmony: “zero kilometres” is a thread running through the recipes he prepares. His cult items include: Fillet of smoked river char on cream of broccoli and ricotta, Wasabi foam and crisp wafers and Entrecôte of “Sprinzen” beef cooked on the grill in a charcoal oven, olive oil, potato gratin and fresh vegetables. It has a refined yet traditional setting: you can have lunch in the traditional Bauernstuben or on the wooden veranda, pampered by the precise and friendly service offered by his wife Mary and brother Siegfried, who also manage the lavish wine cellar, brimming with prestigious labels and a nice choice of spirits.
