In the heart of the Engadin, in Champfèr St. Moritz, there stands a seventeenth-century farmhouse, accommodating a bastion of Mediterranean cuisine in the Alps. The scent of light Swiss pine wood fills the main dining room, while the cosy sitting room of the Stüva makes the warm reception a quite unforgettable experience. This is the realm of Martin Dalsass, who despite his South Tyrolean origins has made Southern cuisine his raison d’être, and with his natural, refined hands he creates his own versions of traditional dishes and is even known as the “Pope of olive oil”. Since 2011, he and his family have run the Talvo restaurant, which has become a Mecca for gourmets on their way through Switzerland in search of hospitality and ease. In the dining room, young Andrea Dalsass has inherited his father’s love for good taste and sensitivity in pairing wines, and skilfully manages a cellar with more than eight hundred labels to satisfy the desires of a host of lovers of fine wine. Another small Stüva reserved for smokers boasts a wide selection of cigars and serves as a room for enjoying an aperitif or refined after-dinner drink: here relaxation is the ultimate expression of customer satisfaction.
