Always out looking for wild blackberries and mushrooms in the forest behind the house, or even freshly picked herbs from the garden, to bring out all the visual appeal and flavour. A pure, linear, comforting style that Martin Benninger learned and made his own after travelling half the world over: from Schaffhausen to Los Angeles, via Rome and Aschau im Chiemgau. His young age, coupled with his wide experience, makes him one of the most high-profile chefs in Switzerland, but his usual formula is simply to let himself go: “Focus on the flavours and fragrances, and leave us the pleasure of providing the welcome.”
