The restaurant is located on a side street in the center of San Sebastián, amidst post-industrial installations, a few steps from the Cathedral of the Good Shepherd, a lifelong dream of Paulo Airaudo. The Argentinian chef of Italian origins, who fully embraced the cuisine of Italy, after experiences throughout Europe, Mexico and Peru, opened La Bottega in Geneva in 2015, immediately attracting the attention of gourmet guides. But his love for the citadel of San Sebastian never left him, and after his experiences at the Fat Duck and at Magnolia he decided to return to the starting point, where he learned the first arts of cooking, from Arzak, pillar of the Iberian cuisine . From Amelia you can live a real gastronomic experience, choosing from the various tasting menus, for twenty-two lucky diners in total. Each menu combines tastes, flavors and memories according to a guideline that surprises every guest, pushing them to try, in a blaze of emotions, even the other proposals in paper. The philosophy of Airaudo prefers fresh ingredients and re-evaluates forgotten products, almost disappeared, which the chef personally selects every day at the market.
