All’Enoteca is a true guarantee: a bright room on the first floor of the building that houses the Enoteca Regionale del Roero in Canale; a colourful menu that recounts the wisdom of country folk and reinterprets it forcefully in modern style and also its professional service. In the upper echelons of Italian cuisine, Davide Palluda’s dishes are inspired by the Langhe and Roero, but include a range of colours and flavours from elsewhere, resulting from travels, research and creativity. A cuisine that has been called “neoclassical”, though we might refer to it more as absolutely contemporary.
