A display window along the Navigli reveals one of the most representative restaurants of Italian cuisine.
Frequented by the Milanese as well as customers from all over the world, with its elegant tables, suffused lighting and artistically-designed dishes and walls, the Sadler restaurant favours simplicity in its fittings with precise, clear and recognisable flavours that lay the foundations for what is a “great regional cuisine in evolution”.
There are no stops for Claudio Sadler, only momentary pauses for a future project, an ambition or a new partnership.
Before elaborating new dishes, the chef creates a design with pastels basing the composition on seasonal ingredients and their aesthetic potential, identifying each of them with a specific colour.
Every new creation comes in several versions and is added to the menu in common accord with the entire kitchen team via a democratic process involving shared intentions.
