One of the finest Italian kitchens away from the Belpaese is located at the top of the highest tower in Tokyo – the Bulgari Ginza Tower: its ingredients are predominantly Japanese, but the techniques are bona fide Italian. Chef Luca Fantin makes his entrance with a rainbow of entrées and tempts gourmets with a spaghetti dish among the best in the world outside Italy: cold Spaghetti with Hokkaido sea urchins. Originally from Treviso and a scholar of Gualtiero Marchesi, Cracco and Heinz Beck with an illuminating period at the Mugaritz, Fantin now finds himself in Japan at just twenty-nine years of age as one of the most important ambassadors of Italian cuisine in the Home of the Rising Sun. Zero km Japanese products blend superbly here with the very best that Italy can expatriate, including the ideas, creativity and that Italian know-how which is the chef’s signature style.
