Paolo Teverini’s cuisine “combines lightness and extraordinary creativity and every bite is a surprise”. The Paolo Teverini restaurant is a unique place in Bagno di Romagna, located in the Tuscan-Emilian Apennine mountains, nestling within the woods of the Parco Nazionale delle Foreste Casentinesi, a gourmets’ paradise in the Tosco Romagnolo Hotel. Every dish tells a story: they are conceived from an emotion, from the taste of an ingredient, from the scent of a memory that the chef finds in the raw material. Here we can savour the very best of Emilian and Tuscan cuisine served with creative flair. This is true of one of his classic dishes: Egg with truffle, shaped like a mushroom; the base is the egg shell with white truffles inside and zabaione made from egg yolk; the hat is made of salted cream and gills of white truffle. As a side dish, there is salad and oven-baked bruschetta of Tuscan bread with bacon, to be finished in front of the guest. A modern locale with an antique feel, “far from the media’s madding crowd, but close to taste”.
