Fusion between sea and sky occurs every evening at Don Alfonso 1890, the magical sacred temple to culinary arts in Sant’Agata dei Due Golfi, where Livia and Mario Iaccarino confirm their positions as world class providers of hospitality and smiles. Theirs is a legend that has been passed on from gourmet to gourmet for over a century, and today it is embodied in the kitchen by Ernesto Iaccarino, a skilful interpreter of their family traditions with a conceptual style which gives ample space to techniques. But his heart is the fundamental element in all that he prepares, an unbridled passion for excellent ingredients and nuances of flavour, expressed in his expert hands that deliver them to the palate of his guests with a focus on the finest details included in his designs. A charming passage-way dating back to Roman times houses a treasure trove of twenty-five thousand bottles and a selection of more than thirteen hundred labels. Conversely, Alfonso has now all but retired from the kitchen to look after Le Peracciole, the family farm that provides so many of the ingredients that his son Ernesto uses to prepare zero-kilometre dishes de la plus haute cuisine.
