As Real(e) as the way in which Niko Romito, the chef, presents his dishes to his lucky guests, as essential as his philosophy, without unnecessary frills and disarmingly simple in the way he conceives his recipes: nineteen years of courageous challenges that the self-taught genius Niko Romito, along with his sister Cristiana, has won with the perseverance and tenacity of someone who decided to transform their family inn into a research centre for gourmets. Opened in 2011 after massive renovation work, this former monastery from the sixteenth century in the Abruzzo National Park is also the creative home to numerous vocational and cultural projects, on catering services and street food, which from Castel di Sangro extend as far as Rome and Milan, all conceived by the chef’s unrelenting powers of thought. If you were to pick on an ingredient that epitomises the philosophy of Reale, it would undoubtedly be bread: as the result of an in-depth study on flour, doughs and leavening, it lies at the heart of the “Bread” project and, thanks to intelligent use of the cold chain, it is delivered to homes, restaurants and shops, in Italy and the world.
