Angelo Sabatelli was a globetrotter chef, whose heart always remained in Apulia, meaning that he never forgot this extraordinary Italian Region and chose it as the cradle where to generate and mould all the ideas and experiences gained on his countless travels abroad. So he chose a land which is not exclusively confined to olive trees and wheat, although it was precisely from the simplest materials that Angelo initially wanted to create new, extravagant and surprising, though reassuring flavours. The chef’s aim is to provide a dynamic, creative and out-of the-ordinary cuisine, which may seem provocative in a region that is often conservative, but he has found the right solutions to smooth down any rough edges in his ideas and firmly-rooted tastes. It is around this desire for challenges that he has built his idea of cuisine inside the noble Palazzo Romanazzi in Putignano, with its historically-refined, yet contemporary-designed dining rooms, where the brilliant white of the walls contrasts harmoniously with the dark-coloured wood of the tables. To add the right finishing touches to this culinary experience, guests can choose from over eight hundred wines, mainly from Italy and France.
