Along the Naviglio Pavese, in the romantic heart of Milan’s nightlife, the name Sadler has risen over the years to become an icon and institution of Italian fine dining. Claudio Sadler, an affable host, was born in Milan but his surname reveals his Trentino and Friuli origins. This genetic mix is reflected in his “great regional cuisine in evolution”, a project in which the chef unveils a range of different influences in his à la carte offer and his increasingly varied and intriguing tasting menus.
Sadler’s fine cuisine philosophy is supported by two main pillars: seasonality and sustainability. Every day these values guide his hand and heart in interpreting recipes and selecting raw materials. As one of the first chefs to enhance the geometric and colourful, visual appeal of a dish, Sadler carves his creations like works of contemporary art that so fascinate him. An innovative culinary imagination, that is surprising on several fronts and ranges from typically exotic flavours to the most classic ones delivering delicacy, freshness and liveliness. His intention is to consecrate an experience for his guests and a place “where they can spend three hours of absolute enjoyment and tranquillity.”
