Pietro Leemann is a chef with a soul, but especially with a mind: a theoretician who has turned cuisine into an authentic form of philosophy. At the heart of his thinking, the leading subject is healthy eating, the result of years of study and learning to harmonise aspects of Chinese diet, Ayurveda and the Steiner school. Following the footsteps of these doctrines, Pietro, still only twenty-nine, founded the Joia restaurant, an avant-gardist temple of vegetarian cuisine. In this holistic culinary offer that is highly balanced and natural, all five senses seem to find their fulfilment. In the way they are served, with their flavours and textures, the dishes trigger a peaceful dialogue that the palate needs to decipher slowly and wisely. In this minimalist setting with its warm colours, though introspective, one lives a moment of true intimacy with food, which Leeman himself summarises as follows: “Nature, geometry, randomness: these are the three elements I include in every dish. Nature is perfection and beauty but cuisine is geometry; it is the rigour with which an element is changed and the new form it receives; randomness is movement and harmony.”
