Ilario Vinciguerra had a long-term wanderlust with a thirst for experience and it was this longing for knowledge that took him across the borders to France, Germany, Belgium and Switzerland before returning to his beloved Italy. Before arriving in Gallarate, he spent some time in Naples, within the walls of Don Alfonso 1890, where he was able to celebrate his Campanian origins. Now in the province of Varese, he promotes his own cuisine, consisting of a constant and meticulous evolution, where his own personality transpires in every detail. Ilario, on the other hand, designs the dishes with his creations, made of net flavours, sincerity, tradition and the contemporary. The results of this cuisine are read in gold print with immediate sensations, delicate tastes and Mediterranean colours. The time-honoured credo of “the three Ps” condenses the chef’s culinary concept: pane, pasta and pastries, all rigorously homemade. He adds a fourth element to these, always implied yet perceptible, that of love, which gives life to a sensory journey synonymous with ethics and aesthetics and simplicity and traceability of the ingredients.
