A terrace overlooking the sea offering picturesque snapshots with every blink of the eye and colours ranging from the blue of the water to the pastel shades of houses: it is with this introduction that the Sarri restaurant in Borgo Prino di Imperia swings open its doors revealing a prized gem of Ligurian wisdom. In the kitchen, chef Andrea turns the simple richness of local ingredients into unique, unexpected and exciting flavours. In this way, his offer becomes a real voyage of discovery for tastes, where the focus remains the concept of conviviality rather than of sacredness.
The seafaring flavours and hints of sea-saltiness embracing the restaurant spill over onto the table with his distinctly-aromatic fish creations. Home-produced, extra virgin olive oil of the Taggiasca variety, fragrant herbs and vegetables from the family garden are leading features of this shrine to the cuisine of Western Liguria. The chef’s wife, Alessandra, pampers the guests with sensitivity, paying careful attention to every refined detail. As stated in the menu, Sarri’s “Lasciatemi fare” (“Leave it to me”) ensures that guests always feel at ease in a setting with quality food and wine.
