The chef’s craftsman-like skill and cult of manual dexterity that embraces every ingredient as if wishing to protect them are quite moving, but also the Mediterranean flashes of brilliance and the rural mastery in interpreting the fifth quarter and offal. In unison, Massimo moves around the dining room to give voice and expression to the stories that Aurora writes in her creations, remaining constantly vigilant to interpret the wishes of their guests.
