This is the point of departure for this insightful, culinary interpreter, originally from Tuscany but now a man from Modena, whose customs he has absorbed. His marked experimentation finds free expression in a personal and profound signature style, where research, meditation and balance blend together to produce dishes with an unexpected touch, though focused on unequivocal messages. Moreover, this is precisely the chef’s spirit, who as a child dreamed of becoming an inventor and now as an adult has succeeded in transforming a kitchen into a laboratory.
