Courtesy, refinement, taste, relaxation, history, research and flair: the Antica Corte Pallavicina magically brings together special, unique traits. This attractive residence, founded as a salt customs house along the banks of the River Po, today stands as an undisputed temple to the typical welcome and cuisine of Parma. Pork is the most venerated meat here, and not only at the table. One only needs to remember that Massimo Spigaroli, an architect himself of these excellent, locally-produced cold meats, has actually dedicated a museum to the outstanding Italian salumi and the pork-butchers who produce them. The raw materials, appearing in the sustainable and zero-kilometre offer of this Italian, culinary ambassador, are delicately worked in the kitchen and come directly from the vegetable garden and in-house livestock farm, which breeds black Parmesan pigs, farmyard animals and white cows. The result is a “gastro-fluvial” culinary art, that is lively, richly-coloured and intimately associated with the local region and its moods, including its damp, foggy clime. Massimo also decided to transform a part of the restaurant into a bistro with an informal, rustic character, the Hosteria del Maiale e del Culatello, where visitors can again enjoy genuine, traditional recipes from the lands of Giuseppe Verdi.
