“S’innalzi la Bandiera!” [“Raise the flag!”] were the words uttered by grandmother Anna D’Andrea in 1977, beginning a family saga that transformed a simple salt and tobacco shop into a trattoria and then into what is today an elite location. Chef Marcello Spadone and his son Mattia take turns in charge of the kitchen stoves, in a relationship of exemplary understanding: “Papa gives free rein to my creativity and use of more advanced techniques, and at the same time gently guides me back to the right local dimension from where I started out. This development has been fundamental in making me what I am.” Their style of cooking has a deep-rooted attachment to local traditions among the soft hues of the hills around Pescara; the typical specialities are looked at again and skilfully processed with precision and wisdom, using top-quality, locally-produced raw materials. Contact with nature continues in the adjacent garden, the royal domain of mamma Bruna and her crops of fruit, herbs and vegetables. The culinary creations follow the rhythm of the seasons with a logical coherence of mixes, methods and textures. In the restaurant’s three dining rooms, Alessio Spadone moves with easy confidence among the guests, in an intimate, bright setting with essential fittings.
