Il Falconiere

Silvia Baracchi

Along the Route du Bonheur suggested by Relais & Chateaux there is a Tuscan stopover you cannot miss. In the setting of Valdichiana, at San Martino a Bocena, Cortona district, you will find Il Falconiere, a resort full of atmosphere and surrounded by the hills. The Baracchi Family has been welcoming its guests for over thirty years in a microcosm where it is possible to relax, to taste excellent cuisine, delicious wines and get to know the surrounding area. Riccardo and his family will tell you about the secret of the estate’s name: “it’s about hunting, and it is scented with antique”, as you can read on their website. The cuisine is run by Silvia Baracchi, who skillfully translates local ingredients and flavors into simple, 0-km, seasonal dishes full of Tuscan soul. The raw materials are chosen to give life to the dish itself, to be faithful to local cuisine and, at the same time, make it more immediate. Regional traditions meet wood, game, sweeping from tradition to novelty: from Ribollita to pici with Cinta Senese guanciale, from Hare pappardelle to Roasted pigeon in casserole. The oil of the farm, the Chianina meat, the fresh fish from Trasimeno Lake, the family’s wine: they all contribute to create small masterpieces of taste
