In the small town of Colle Val d’Elsa, immersed in the beauty of Chianti country, there’s a warm, welcoming upper-tier restaurant overlooking the Tuscan hills called Arnolfo, owned and operated by chef Gaetano Trovato. Located inside a 17th-century villa, Arnolfo opened its doors in 1994. It seats just thirty guests and features a pair of luxurious dining rooms and a spacious terrace. While the kitchen takes its cue from classic trattorias, it sets itself apart with refined elegance that’s hard to match. Gaetano’s brother Giovanni is in charge of the wine cellar, and it’s his job to come up with the perfect synergy between food and wine. Each dish puts the spotlight on one or more local ingredients, while carefully eschewing repetitiveness and focusing on seasonality and sources that guarantee small production of the highest quality. All dishes exude richness and precision, with colors that jump out at you and well-defined tastes. There’s an abundant choice of fish from the Tyrrhenian Sea, as well as Tuscan red meat dishes that have their rightful place on the menu. After caramote prawns, turbot and cuttlefish ink, change gears with pigeon and sweetbreads for a remarkably harmonious and pleasurable gastronomic jaunt. The icing on the proverbial cake? A night spent in one of Maison di Arnolfo’s tastefully appointed rooms and a special breakfast prepared by the chef.
