In the totally restructured 17th-century mill, El Molin began in 1990. The restaurant is run by chef and owner Alessandro Gilmozzi. Located in Cavalese, in Val di Fiemme, where inside this treasure chest of undisputed beauty and great charm, local mountain food that goes for substance is served up. Every dish has been engineered for low environmental impact and in conjunction with local producers, farmers’ cooperatives, craftsmen, and specialized butchers. Fir trees, honey, mushrooms, trout, lake char (Salvelinus umbla), Trentino apples, snails, noble rot: just a few of the ingredients the chef enjoys recounting in his dishes, which are obtained directly from the richness of these surroundings. Gilmozzi puts a special focus on cooking, smoking and fermentation. People all too often dismiss the mountains as a place that doesn’t distinguish itself for its food and its cooking. But Alessandro Gilmozzi is without a doubt one of those special people who, with passion and dedication, seeks to give back to this extremely rich and varied territory, a voice, value, substance. Since 1990 El Molin has been accompanying guests on a journey through the tastes, scents, and colors of Val Di Fiemme, and always showing great respect for nature and seasonality. There is love for the mountains in every bite.
