Martina’s training is eclectic, a bit rock’n’roll, having spent time in South America and the UK, and with leading Italian chefs. Her cooking is original, fresh, delicate and absolutely feminine. Fresh local fish is clearly the main attraction. But by no means is the land neglected – on the contrary! The island’s vegetables and spices are Mediterranean jewels that enhance each land-inspired dish. Martina uses these locally-sourced ingredients with masterful technique and innovation, and has cultivated an impressive relationship with local producers. The result is both entertaining and refined. Bagna cauda with raw sea urchins, Mezzi paccheri with squid, tumapersa and chard, Grilled moray eel. Luca directs the hotel and the dining room. His is one of Sicily’s most interesting wine lists. The Signum’s cellar boasts a fine selection of excellent wines from the world over. You’re in for a supersonic sensorial experience!
