The words of Walter Ferretto, the chef who, along with his brother Roberto, has been at the helm of Il Cascinalenuovo, in Isola d’Asti, for more than 30 years. Being able to rely for so long on the same lucidity – inspired by great passion and dedication – when it comes to his job, his cooking, the local area, is noteworthy. After opening its doors in 1968, the restaurant played host to a stream of successive generations of management. It underwent a major renovation to keep up with the times and never fall behind. Meat and fish in abundance, and a serious focus on Piedmontese traditions. The menu features the best in regional cooking, along with more creative and innovative fish dishes. Alongside proposals from different cultures (and the year of their inception), including iconic dishes by the Ferretto brothers: the 1987 Millefoglie veal tongue, scrumptious and refined; the 1995 64°Egg and giardiniera pickled vegetables; the 2002 Stewed onions with Granny Smith apple, robiola di Roccaverano fresh goat cheese, and marinated mackerel. Recently refurbished rooms are available for overnight stays to make for the complete experience.
