With its private beach and unassuming access from the street, Uliassi might be mistaken for your typical fish house along the eastern shore of Senigallia. But inside things change once you’re welcomed by Catia Uliassi. She’s the high-class, super-energized sister of chef Mauro Uliassi. Catia does a lot for this restaurant, and is the mastermind behind the elegant decor and tasteful furnishings whose colors take their cue from marine themes.Shade of blue, coral red, white and beige. Large, sober tables with perfectly starched tablecloths. After years of hard work and waiting, at last meaningful goals have been achieved. Mauro’s cooking unfolds in an ongoing dialogue with his home territory, with the sea and the seasons, the timing of tastes and details to the extreme. Nothing is left to chance. Tasting menus are climaxes in taste – just what they should be – sequences of flavors and complexity. Young servers are attentive and for the most part silent as they flitter from table to table in response to their guests’ every need, respectful of their gastronomic experiences without leaving a trace. Besides the classics, there’s also the experimental Lab Menu with its ten newly-devised courses featuring wild game dishes, which must be booked in advance.
