When the Martinis opened their trattoria in 1969, they sought to create a place that was different from the local osterias – where the watchword would be genuineness, in the name of a less structured simplicity. Of course, that meant – and still means – offerings from the grand Mantuan meat-and-fish traditions, made with ingredients of the highest quality. Try eel in carpione, pike in sauce. The pumpkin tortelli are probably among the Po Valley’s best. The capon-breast salad in sweet-and-sour sauce is another big hit.
