Young Salvatore Morello is the new executive chef at Inkiostro, joining owner Francesca Poli and a staff poised to pull off a major gastronomic victory. Originally from Catanzaro, Sicily, Morello has worked in some of Europe’s best kitchens under renowned chefs like Alain Ducasse, Christian Bau and Joachim Wissler, and has developed his own style, one that’s strikingly clean and rational. Thus, Inkiostro moves into a second phase of existence, with a revamped, updated approach and pages of history still to write. The well-stocked wine cellar is faultless and on target. There’s also an ample selection of distilled spirits, which have been chosen for innovation in production methods and ingredients. Well worth the trip to Parma.
