A refined modernity that bears nothing artificial or prissy: the leading player at the Enoteca is the light that bathes the dining hall and the lovely terrace, shimmering among the shades of black and white and searching among the canvases of Mondo, the eclectic painter from Canale. We find ourselves on the first floor of the 19th-century building that houses the Enoteca Regionale del Roero, in the historic centre of Canale. The menu of chef Davide Palluda talks about local traditions and the profound wisdom of farmers’ wives, while lying open to external influences with colours and flavours, acquired through travel, research and creativity. We can find all the most typical local ingredients such as early-maturing Madonna chestnuts (also called “Canalina”), Madernassa pears and, of course, white Alba truffles. David is accompanied by his sister Ivana, who with gentleness and professionalism assists guests in their choice of dishes and in finding the perfect pairings between the wines and the chef’s specialities. The wine cellar houses nearly five hundred different labels and would merit a separate story of its own, as the name of the restaurant suggests.
