Behind the walls of the Upper Town, not far from the Carrara Academy Museum among attractive arches and paintings on the walls, you enter into a seventeenth-century sacristy: three elegant dining rooms and a large internal garden are home to the restaurant, run by Giuliano Pellegrini. His wife Silvia and their children, Mattia and Lorenzo are there to assist the chef in greeting their guests. The cuisine recalls the traditions of Bell’Italia but reveals a particularly deep bond with Giuliano’s birthplace Tuscany, and is delivered with exquisitely welcoming warmth. It includes Reginette pasta with pigeon, white truffle and foie gras, Spaghetti with shelled clams and sweet, grey mullet bottarga (roe), Lobster Catalan-style and Italian shellfish or Veal sweetbread. “In my work I try to tell my own story, transmitting the detailed, complex sensations of my soul, the music and songs that made me fall in love with this commitment. I like to think of my restaurant as a place where people feel at ease to meet each other and spend a few pleasant hours together. I would not like it to lose sight of its primary aim: giving pleasure through its cuisine,” says the chef.
