The path he embarked on continues under the guidance of Enrico Dandolo, his son-in-law who was at his side for 26 years, and with the Fondazione Gualtiero Marchesi, founded in 2010. The menu at the Ristorante Gualtiero Marchesi is based on his historic, classic dishes that have become true icons: Gold and Saffron Rice, the Open Ravioli, Spaghetti Salad with Caviar, Fish Dripping, Red and Black are among the many dishes prepared according to his encoded recipes. These are accompanied in line with Marchesi’s philosophy by some new dishes, that express his curiosity and his passion for raw materials enhanced by perfect technique and a strong aesthetic component. A cuisine with its sights set high that has succeeded in uniting goodness with beauty, achieving essentiality along a path of simplicity.
