The authenticity of Mantuan roots have been firmly defended here for over fifty years. Tano and Alessandra maintain their proposal of a local cuisine expertly dispensed between “recipes fit for princes and for the people”, providing a journey through the culinary history of an ancient noble House of the 16th century, with a perfect balance of warmth and elegance. Outside in the summertime, there is an ancient fifteenth-century well that welcomes those seeking a romantic dinner. The essential link with tradition means that the spouses’ cuisine is called “orthodox”: never over the top, varied and complex, rich and poor, urban and rural, capable of interpreting the roots of the place with elegant refinement. Traditional cooking techniques and rejection of fashions, attention to the selection of raw materials: these are the cornerstones of the Cigno; calling it a “Trattoria” is an oxymoron. A round of applause should go to Warm Capon breast in sweet-and-sour sauce with salad, a reinterpretation of a recipe by Bartolomeo Stefani, Chef to the Court of the Gonzaga.
